1 tbs olive oil or bacon fat
The toppings:
1/4 cup Parmesan cheese
1 cup shredded pepper jack cheese
About 5 grape tomatoes, quartered
4 eggs
Salt and pepper
4 strips of bacon, cooked (but a bit underdone)
2 scallions, white and light green parts separated into two piles
Few leaves fresh basil, thinly sliced
