Try to get good-quality shrimp (I went to a local fishmarket), and for three people, we only needed half a pound, so the total cost of this dish was pretty low, too! Remember to ask them to clean and de-vein your shrimp for you, it's a necessary step that can be very time-consuming. But other than that, this dish was done in about a half hour.
1 green bell pepper
1/2 a yellow onion
1 medium/small potato, peeled and cut into dice
olive oil
salt and pepper, to taste
1 tomato, chopped and seeds discarded
1 can coconut milk
2tsp tomato paste (I recommend getting the kind in a tube, so you're not throwing out most of a can)
1/2 lb of large shrimp (30-40 per pound), cleaned and de-veined
A handful of fresh cilantro, chopped roughly
Squeeze of Lime juice
Rice, to serve. I used a package of "Yellow Spanish Rice," although plain white rice will also go well with this dish.
