1 large, firm tomato per person
1 8oz can tuna, drained (this would probably serve 3; there was extra salad)
1/4 red onion, minced
1/2 cucumber, quartered lengthwise and sliced
1/4 cup black beans, rinsed
1/8-1/4 cup chopped fresh parsley, few leaves reserved
juice of 1/2 a lemon
2 tbs olive oil
salt and pepper, to taste
The first thing you want to do is cut the top off of the tomatoes and scoop out the insides. I used a grapefruit spoon and it really helped get everything out, but it still took me longer than I thought it would. You want to save the membranes from the inside of the tomato, but discard the seeds. Chop up any larger tomato chunks into bite-sized pieces. Now mix the onion, tomato pieces, cucumber, black beans, and the tuna, breaking the tuna up with a fork. Fold in the parsley, lemon juice, and olive oil, and season to taste. Take the tomato cups and spoon the salad into them. Garnish with an extra parsley leaf, if desired. Enjoy!
