1 onion, finely chopped
1 clove of garlic, minced
1 carrot, peeled and chopped
Handful of fresh basil, leaves picked, stalks reserved and finely chopped (I had red basil--it's gorgeous!)
Olive oil
6 tablespoons heavy cream
1 teaspoon red wine vinegar
2 egg yolks
2lb 3oz super-ripe tomatoes (I used one 28oz can, and most of one 14.5oz can)
5 cups chicken or vegetable stock
Salt and freshly ground black pepper
