1/2 yellow onion, finely chopped
2 garlic cloves, thinly sliced
1 cup tomato puree (I use an 8oz can of low-sodium sauce)
2 tbs olive oil, divided
1 small eggplant (try to find similar sizes of all, or cut to similar sizes, like I did)
1 small zucchini
1 small yellow squash
1 long-looking red bell pepper
Sprigs fresh rosemary (SK uses thyme, but all I had fresh was rosemary. I think it works very well both ways)
Salt and pepper
To serve:
I used instant wild rice, but couscous is also delicious. Even better if you add some goat cheese, to taste.
* I have to admit, I don't always do this, but I love how this dish is almost steamed when I cover it like this. The sauce is just thick enough, and really flavorful but still light, and the veggies don't brown, which makes for a great presentation. But sometimes I'm just too lazy. Do try it with parchment, though, it does make for a more authentic dish (to the cartoon movie..!). I laugh when I think of emulating a cartoon rat, but this is so delicious, I don't mind. Enjoy!
