For each cocktail, you'll need:
1/3 cup fresh pineapple chunks
1/4 cup pineapple juice
3 ice cubes
2 tbs coconut cream
1/4 cup rum
Fresh pineapple wedges for garnish (how-to follows)
In a blender, layer the pineapple chunks and juice, ice, coconut cream and rum. Blend until smooth, pour into a glass, and garnish with the pineapple wedge. Enjoy (and stay cool!)!
To cut fancy spears for garnish, carefully slice accross the top of the pineapple, cutting a circle of unpeeled fruit. Out of that circle, slice a few wedges without including the center, as it is not a pleasure to eat. Carefully cut into the point of each wedge to make a gap for the glass.
