1 lb ground turkey
1 egg, lightly beaten
1/4 cup Italian-style breadcrumbs
2 tbs chopped fresh parsley
2 tbs Parmesan cheese
Salt and pepper, to taste
optional: 2 cloves garlic, minced (the meatballs were very garlicky the first day, but mellowed out the next day. If you want less garlic, just omit it.)
For the soup:
1 tbs olive oil
2 cloves garlic, minced
1/2 onion, minced
1/2 cup chopped carrots
3/4 cup chopped celery
1/4 cup dry white wine
Salt and pepper, to taste
32 oz low-sodium chicken broth
4-5 oz chopped fresh spinach
