Olive oil
1 lb Italian Sausage, bulk, or casing removed
3 cloves garlic, minced
1/2 large yellow onion, chopped
2 carrots, peeled and chopped
2 celery ribs, chopped, leafy tops reserved for garnish
32 oz pkg low sodium chicken stock or broth
1 15.5 oz can white beans, rinsed and drained
1 small red potato, peeled and cubed
1 zucchini, halved lengthwise and sliced
1-2 cups fresh spinach, large leaves chopped
Optional: fresh parsley for garnish
This definitely hit the spot with me, and was quite comforting. All the veggies make it a healthy and hearty soup, and the sausage adds wonderful flavor.
