A thumb-sized piece of ginger
2 cloves of garlic
1/2-1 fresh red chili, sliced (I used 1 tsp red pepper flakes)
1 large boneless skinless chicken breast, cut into strips
Salt and pepper
2 scallions
Small bunch of cilantro
2 heads baby bok choy, quartered lengthwise
4 shiitake mushrooms (I used 1 portobello, the boyfriend doesn't like mushrooms)
2 bundles ramen noodles, flavor packets discarded
Peanut or vegetable oil (I used sesame-love that flavor!)
1 8oz can water chestnuts
2-3 tablespoons low-sodium soy sauce
1 small lime
The chicken comes out really moist and flavorful, and the ginger and soy sauce make it so fresh and mouth-watering. Plus, I love how easy and quick the ramen noodles are. And bok choy is really good for you, as well as being delicious. So instead of getting take out and eating MSG, you get this really fresh and healthy take on all of the flavors you were craving.
