1/2 cup canned black beans, rinsed and drained
2 tbs finely diced red pepper
1 scallion thinly sliced
Small handful of cilantro, chopped
4 flour tortillas
1/2 cup sharp cheddar, shredded
1/2 cup pepper jack cheese, also shredded
4 flour tortillas (I like "medium" or "Fajita" sized)
Combine vegetables and cilantro in one bowl, cheeses in another. Heat a skillet over medium heat. I like to heat up the tortillas separately to help them adhere to the filling.
