You'll need:
1/2 a ripe avocado, chopped
1 ear of corn, cooked and kernels removed
1/2 cucumber, halved lengthwise and sliced
Handful of grape tomatoes, chopped or halved
Juice of half a fresh lemon (or lime)
Drizzle of olive oil
Salt and pepper, to taste
Mix the vegetables in a bowl, and squeeze the lemon over all. Drizzle over some olive oil, and season lightly. Toss to mix, and serve immediately. Enjoy!
