3/4 lb Salmon, one side skin-on
salt and pepper
Sesame oil
1/2 tsp sesame seeds
Low-sodium soy sauce, to taste
For the sides:
1 head broccoli, florets cut and stalk peeled and sliced
1/2 package instant wild rice (I found this easy nutty option at Food Emporium)
First, prepare the broccoli and set it in a pot with 1/2 inch of water in it. Then, set the rice in a second pot and the water required according to the package directions set aside in a glass. Now set a skillet over medium-high heat. Add to the skillet about a tablespoon or so of the sesame oil. Add the salmon, skin-side down. Season the top of the salmon with salt and pepper, and add 1/2 the sesame seeds. When the skin is brown, after about 3 minutes, flip the salmon. Now start your sides. Set the broccoli to steam, and add the water to the rice and cook according to the package directions. Check on the broccoli, by now it should be just about ready (I like mine cooked just past crisp-tender). Drain. The rice should also be almost done. Re-flip the salmon, and check for flakiness (total cooking time should be about 6-8 minutes). Add the rest of the sesame seeds to the broccoli. Serve with soy sauce. Enjoy!
