2 1/4 cups flour (1/4 cup whole wheat optional)
1 1/2 tsp salt
1 stick butter, frozen and cut into dice
1 egg
1/3 cup ice water
1 tbs vinegar (I like cider, but white is fine)
For the spinach and chicken empanadas:
Olive oil
2 cloves of garlic, minced
5 oz fresh spinach, chopped
Salt and pepper, to taste
1/2 cup diced cooked chicken
Cream cheese or Goat cheese
1 egg, for an egg wash
