I love ginger! The freshness of it, how it's spicy but still sweet, and a bit citrusy. Yum! I especially love ginger cocktails, but I hate the fake, too-sweet flavor of flavored vodkas. About a year ago, I went to this great Russian Restaurant called Uncle Vanya's in midtown east. They had the most amazing homemade flavored vodkas; from lemon and cranberry, to an unbelievable horseradish and garlic! All they do to make them is take a container full of vodka, add tons of fresh ingredients and let it sit! So that's what I did! I have this really cute container that holds about two cups of liquid. I took a little under a thumb-sized piece of ginger, and peeled it and chopped it up. Then I added it to the vodka in my container. I tried it 48 hours after I made it and it was pretty good, but I can't wait to try it when the flavor has really concentrated! The Russians from that great restaurant said it takes about a month or so. Delicious!
